Why Water Buffalo?

Because not all tallow is the same.

When I first began making skincare with tallow more than a decade ago, I thought about it rather simply.

Tallow was tallow.

Some might come from grassfed animals. Some might be rendered more carefully. But fundamentally, I assumed the fat itself was more or less the same.

Years of raising water buffalo—and eventually laboratory testing their tallow—changed my mind.

Species matters.

So does what an animal eats.

So does how the fat is handled after harvest.

And once I began looking at tallow through that lens, water buffalo stopped being simply our unusual source of tallow.

They became one of the most interesting parts of the story.


It starts with the animal.

Water buffalo aren't cattle.

They are an entirely different species, with their own physiology, metabolism and characteristic fat composition.

When I married my husband, David in 2009, he had been raising them on our Georgia farm since 2000, long before I ever imagined their tallow would someday become the foundation of a skincare company.

They were here first.

The skincare came later.

Our buffalo spend their lives grazing within the regenerative system we've built on our farm. Their diet is forage-based, and we don't grain-finish them to produce a standardized commodity fat.

That means our skincare ingredient doesn't begin with a drum arriving from a supplier.

It begins in a pasture.

With an animal we know.

Eating grass we grow.

On soil we're continually working to improve.

That connection matters to me.

But eventually I wanted to know whether it mattered to the fat.

So we tested it.


We put our tallow under a microscope. Figuratively speaking.

I sent samples of our water buffalo tallow and beef tallow to an independent laboratory for fatty-acid analysis.

I wasn't looking for a marketing story.

I wanted numbers.

And the numbers surprised me.

Our water buffalo tallow contained:

36.42% Stearic Acid

A long-chain saturated fatty acid that contributes structure, richness and a substantial, velvety quality to cosmetic formulations.

17.73% Palmitic Acid

Another major saturated fatty acid commonly found in both animal fats and human skin surface lipids.

18.31% Oleic Acid

A monounsaturated fatty acid valued for its emollient properties and fluidity.

0.54% C15:0 — Pentadecanoic Acid

An intriguing odd-chain saturated fatty acid that is receiving growing scientific attention. We're watching the research closely, but we're not going to turn an interesting laboratory finding into an anti-aging claim before the science gets there.

0.52% Alpha-Linolenic Acid

An essential omega-3 fatty acid.

And one particularly curious result:

5.15% C16:3 — Hexadecatrienoic Acid

That's an unusual omega-3 fatty acid to find at this concentration in an animal fat, and it's one we're continuing to investigate.

We're fascinated by it.

But fascinated is different from proven.

You'll hear us talk about that distinction a lot around here.


The number that stopped me in my tracks: 36.42%.

That was the stearic acid content of our water buffalo tallow.

The beef tallow sample we tested contained 18.97%.

Nearly half as much.

That doesn't prove that every water buffalo tallow will have this composition or that every beef tallow will have another. Animals, diets, fat deposits, seasons and processing methods all introduce variation.

But it proved something important to me:

Tallow isn't simply tallow.

The two fats I had tested were measurably different.

Our buffalo tallow was substantially more stearic-rich and more saturated overall than the beef sample.

Total saturated fatty acids:

Water Buffalo: 58.92%
Beef: 48.68%

Oleic acid told another part of the story:

Water Buffalo: 18.31%
Beef: 30.62%

These aren't better-versus-worse numbers.

They're different fats.

And different fats behave differently.


Why does that matter in skincare?

Because fatty-acid composition influences the physical character of a fat.

Its firmness.

Its melting behavior.

Its oxidative stability.

Its slip.

Its richness.

And the sensory experience it creates on your skin.

Our water buffalo tallow is remarkably substantial without feeling like a heavy coating.

It creates what I can only describe as cushion.

That quality has become especially important to me as my own skin has matured.

I don't want an oil slick.

I don't want something that simply sits there.

And I don't need my skincare to wage war against my age.

I want my skin to feel soft, supple, protected and comfortable.

Water buffalo tallow gives me a beautiful foundation from which to formulate for exactly that.


What about all those tallow vitamins?

Here's where our story takes an unexpected turn.

You'll frequently read that grassfed tallow is "packed with vitamins A, D, E and K."

I used to repeat that, too.

Then I decided to test it.

Our laboratory analysis did find naturally occurring retinol and alpha-tocopherol in our buffalo tallow.

It measured:

Retinol: 205 IU/100g
Alpha-tocopherol: 2.41 mg/100g

Vitamin D was below the laboratory's reporting threshold.

Vitamin K1 and K2 (MK-4) were measurable, but present in small amounts.

In other words:

Tallow's most interesting story may not be its vitamins at all.

I think the fatty-acid composition itself deserves far more attention.

That's where our research is taking us now.

And I'm perfectly happy to change what I say when better information gives me a reason to.

That's science.

And that's trust.


Why is water buffalo tallow so beautifully white?

This is one of my favorite pieces of buffalo biology.

If you've ever seen grassfed beef fat, you've probably noticed its golden-yellow color. Much of that color comes from carotenoid pigments in forage.

Water buffalo handle beta-carotene differently.

They efficiently convert beta-carotene rather than accumulating large amounts of the pigment in their fat. As a result, water buffalo body fat and butterfat are characteristically white.

Ours comes out of the animal that way.

No bleaching.

No refining process to make yellow fat white.

Just beautiful, naturally white buffalo fat.

Around here, I call it:

White Gold.


And then we try very hard not to ruin it.

Once you've spent years regeneratively raising an animal and growing an extraordinary raw material, I think you have a responsibility to handle it accordingly.

So we don't start with this beautiful white buffalo fat and aggressively process it into anonymous commodity tallow.

We gently dry render it in small batches.

No salt-water washing.

No deodorization.

No bleaching.

No industrial refining.

I call the result our Virgin Grade Tallow.

It's a term I've chosen to describe our own standard of minimal processing—not an official industry grade.

That distinction matters to me.

Our philosophy is simple:

Preserve the character of the raw material rather than processing the character out of it.

We're now taking that philosophy back to the laboratory, comparing dry-rendered and water-refined samples for oxidative stability and other measures.

If the results challenge what I believe, I'll tell you.

If they support it, I'll tell you that, too.

Either way, we'll know more than we did before.


Raised Right.

I can tell you the percentages.

I can show you the laboratory reports.

I can explain stearic acid and lipid chemistry until the buffalo come home.

But eventually this story leads back to something much simpler.

You can't separate our tallow from the way we farm.

Our skincare begins long before I enter the formulation room.

It begins with soil.

Grass.

Sunlight.

Rain.

Animals moving across pasture.

And farmers making thousands of small decisions about how those animals and that land will be cared for.

That's why Raised Right isn't a marketing phrase to us.

It's the first step in making the skincare.
