Why Aging Skin Needs Lipids
Moisture is only part of the story. Aging skin may also be asking for the lipids that help it stay comfortable, resilient, and supported.
Your skin isn't failing you. It's changing.
For years, skincare has taught us to think about dry skin primarily in terms of moisture.
Drink more water.
Use a hydrating serum.
Apply moisturizer to damp skin.
Add another humectant.
Those things can certainly help.
But as our skin matures—particularly during and after menopause—something more fundamental is happening.
Our skin's relationship with lipids changes, too.
And if you've reached the point where your skin seems perpetually dry, tight, fragile or uncomfortable no matter how much "hydration" you give it, lipids may be an important part of what has been missing.
First, a little skin science.
The outermost layer of your skin is called the stratum corneum.
One way to picture it is the classic "bricks and mortar" model.
The bricks are flattened skin cells called corneocytes.
Surrounding those cells is an organized lipid system composed primarily of ceramides, cholesterol and free fatty acids.
Those lipids matter enormously.
They help create the barrier that keeps the outside world out—and keeps precious water from escaping from within.
A healthy skin barrier helps skin remain:
Soft. Supple. Comfortable. Resilient.
When that barrier isn't functioning as effectively, water escapes more readily through a process called transepidermal water loss, or TEWL.
The result can feel very familiar:
Dryness. Tightness. Rough texture. Flaking. Increased sensitivity. Skin that suddenly seems much less tolerant of things it handled beautifully ten years ago.
This is why hydration and lipids aren't the same thing.
Hydration refers to water.
Lipids are fats.
Your skin needs both.
Humectants such as glycerin and hyaluronic acid can help attract and hold water in the upper layers of the skin.
Emollient and occlusive lipids perform a different job. They soften and smooth the surface, help fill the spaces between roughened cells and create a protective layer that can help slow water loss.
So sometimes the answer to increasingly dry mature skin isn't simply:
More water.
It may also be:
Better lipid support.
Then menopause enters the room.
If your skin seemed to change almost overnight somewhere in your 40s or 50s, you probably weren't imagining it.
Declining estrogen affects the skin in numerous ways, including changes in hydration, thickness, elasticity, sebum production and barrier function.
That can leave mature skin feeling fundamentally different from the skin we had at 30.
And this is where I believe skincare advice sometimes lets older women down.
We're frequently offered more:
More exfoliation.
More acids.
More resurfacing.
More powerful actives.
More things designed to make our skin behave younger.
Those ingredients absolutely have their place.
But sometimes mature skin is asking us for something quieter.
Comfort. Cushion. Protection. Replenishment.
Instead of constantly asking, "How can I make my skin look younger?"
I've become much more interested in asking:
"What does my skin need to function well now?"
That question changed the way I formulate skincare.
Why fats?
Long before we understood ceramides, corneocytes or transepidermal water loss, humans understood something much simpler:
Fat feels good on dry skin.
But modern lipid science helps explain why.
Topically applied oils and fats can act as emollients and occlusives. Depending upon their composition, they can soften rough skin, improve flexibility and reduce the amount of water escaping from the surface.
But here's where things become especially interesting to me:
Not all fats are the same.
Olive oil isn't jojoba.
Jojoba isn't shea butter.
Shea isn't beef tallow.
And beef tallow isn't water buffalo tallow.
Every natural fat has its own characteristic composition of fatty acids and triglycerides, which influences properties such as firmness, melting behavior, oxidative stability and the way it feels on skin.
I know that because we tested ours.
What our laboratory testing taught me
I'm a farmer and formulator by trade, but curiosity has always been one of my greatest occupational hazards.
I read early on—and repeated—some of the same claims you'll find throughout the tallow skincare world.
One of the biggest was that grassfed tallow is "packed with vitamins A, D, E and K."
Eventually I wanted to know:
How much does it have? Is it actually true?
So I sent our water buffalo tallow to an independent laboratory for analysis.
Then I tested beef tallow, too.
The results changed the way I talk about tallow.

And, frankly, I'm glad they did.
Our testing did detect naturally occurring retinol and alpha-tocopherol in our water buffalo tallow. But the concentrations weren't anything like the extraordinary vitamin levels often implied by online tallow marketing.
The much more interesting discovery was the fat itself.
Our water buffalo tallow contained:
36.42% stearic acid
17.73% palmitic acid
18.31% oleic acid
0.54% pentadecanoic acid (C15:0)
0.52% alpha-linolenic acid (omega-3)
Overall, 58.92% of its fatty acids were saturated fatty acids.
In other words, our laboratory testing revealed a remarkably stearic-rich, highly saturated fat with a fatty-acid composition quite different from the beef tallow sample we tested alongside it.
That was much more interesting to me than the vitamin marketing claim.
Why we're especially interested in stearic acid
Stearic acid is an 18-carbon saturated fatty acid widely used in cosmetic formulation.
It contributes richness, structure and body to formulations and is valued for its emollient properties.
Our water buffalo tallow tested at 36.42% stearic acid.
For comparison, the beef tallow we tested contained 18.97%.
That's nearly twice the concentration in those particular samples.
I don't interpret that to mean that stearic acid is an anti-aging miracle.
It isn't.
What it tells me is that the raw material we're working with is genuinely different.
And for a skincare line devoted to dry, changing, mature skin, I'm very interested in a naturally rich, substantial, highly structured fat that creates the kind of cushion and comfort my own skin increasingly appreciates.
And then there's our "White Gold."
Water buffalo fat has another remarkable characteristic:
It's naturally white.
Water buffalo efficiently convert dietary beta-carotene rather than depositing the yellow pigment into their body fat. The result is the characteristically white fat and butterfat associated with the species.
We don't bleach our tallow white.
We don't deodorize it.
It comes from the animal that way, even with the lushest of forages grazed.
On our farm, we've come to call this beautiful raw material White Gold.
And after raising water buffalo for decades, I don't take a bit of it for granted.
Raised right. Rendered right.
What happens before rendering matters to us just as much as what happens afterward.
Our water buffalo are raised regeneratively on our Georgia farm as part of a living agricultural system of animals, forage, soil and seasons.
And once we have this extraordinary fat, we try very hard not to over-process it.
Instead of aggressively refining it, we gently dry render our tallow in small batches.
I call the result Virgin Grade Tallow.
It's our philosophy of minimal intervention:
Start with an exceptional raw material.
Handle it carefully.
Remove only what doesn't belong.
And don't unnecessarily process away the character of what remains.
We're continuing to laboratory-test our rendering methods, including studying oxidative stability and how different processing techniques affect the finished fat.
Because I don't want to tell you that our way is better simply because it sounds more natural.
I want to know.
So, is tallow the same thing as your skin's natural lipids?
No.
And I think that's an important distinction because that's another false claim.
The skin barrier is a sophisticated biological structure whose extracellular lipids consist primarily of ceramides, cholesterol and free fatty acids.
Tallow is predominantly triglycerides.
So I won't tell you that tallow magically "matches human sebum," replaces your skin's lipid barrier or contains everything aging skin needs.
Skin biology is far more interesting than that.
What I will tell you is that well-formulated topical fats can be wonderful emollient and occlusive companions for dry, lipid-depleted-feeling skin.
And after more than a decade of working with tallow—and living in mature skin myself—I've become increasingly interested in which fats we choose, how they're raised, how they're processed and how they're formulated.
This isn't anti-aging skincare.
I have fine lines.
I have sun damage.
My skin carries evidence of years spent outdoors, working on a farm and living a life I wouldn't trade for perfect skin.
I'm not interested in erasing any of that.
I am interested in skin that feels:
Comfortable.
Supple.
Cushioned.
Resilient.
Radiant.
Well cared for.
That's what regenerative skincare means to me.
